- Grind medium‑coarse. Add hot water just off the boil and stir gently.
- Let it sit about 4 minutes, then plunge slowly and serve.
Espresso Pressure
- Use about 18g for a shot and let it run ~26–30 seconds, aiming for ~40ml.
- Look for delicate crema with sweet cacao, vanilla and gentle berry notes; adjust grind slightly to taste.

We rest every roast for at least a week so CO2 can gently degas and the flavour can settle. Then, within minutes, we seal the beans in nitrogen-flushed, triple-layer high-barrier bags fitted with premium one-way valves. This locks out oxygen and moisture while letting remaining gas escape, keeping Marin vibrant for up to 24 months. Because we source through trusted organic origin partners and roast in small batches in New Plymouth, we control flavour from origin to cup.
